Saucy Eggplant dish with tomatoes and onion

Recipe Ingredients for Eggplant Goop

700 g eggplant
300 g onions
600 g tomatoes
1 T olive oil
30 g garlic
1/4 t black pepper
1/4 c parsley
6 oz Tomato Paste
1 t Sodium-Free Salt
2 T sugar
1 c water
1 T lemon juice

Recipe Directions for Eggplant Goop

  1. saute chiopped onion in olive oil

  2. add in garlic and allow to become fragrant - don't burn

  3. add chopped tomatoes and let carmelized a bit

  4. add pepper and salt substitute and parsley

  5. add in chopped/chunked eggplant

  6. mix all together and cook with a bit of added water (lidded)

  7. mix paste with water and add to pot (with lemon juice)

  8. simmer until eggplant is done

  9. add sugar if desired to pot before finishing the simmer and mix in well (if tomatoes are too tart)
