Recipe Ingredients for Eggplant with Garlic

2 large eggplant
1/3 cup lemon juice
1/6 cup extra virgin olive oil
5 cloves garlic
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Eggplant with Garlic

  1. Roast eggplant until soft. Punch a few holes it them before so they won't burst

  2. set them aside and let them cool. then peel the black skin off and discard. also if there are large hard seeds, scoop them out and discard.

  3. mash the garlic, add lemon, oil and spices to garlic mixture

  4. take a fork and mash up the eggplant until it is all kind of mushy. add the garlic misture and blend well

  5. serve with pita bread.Also very good on top of a grilled steak.
