Recipe Ingredients for Eggplant with garlic and basil

3 tsp fish sauce
1 tbsp lime juice
1 tsp lime zest, grated
1 tbsp brown sugar
1/8 tsp red pepper flakes
4 tsp peanut oil
6 cups eggplant, diced
6 cloves garlic, minced
1 tbsp fresh ginger, minced
2 scallions, sliced thin
1/2 cup fresh basil

Recipe Directions for Eggplant with garlic and basil

  1. Mix fish sauce, lime juice and zest, sugar and pepper in bowl. Set aside.

  2. Heat 1 tbs oil in non stick frying pan over medium high. Add eggplant and cook 5 minutes stirring.

  3. Make well in center and add garlic and ginger with tsp oil. Mash ad cook 30 seconds. Mix with eggplant add sauce and stir.

  4. remove from heat and add scallions and basil
