Recipe Ingredients for eggplant fritters

2 eggplant
1 tbsp parsley
1/4 cup basil
1 clove garlic
4 tbsp parmesan cheese
2 eggs
1 cup bread crumbs

Recipe Directions for eggplant fritters

  1. Oven - 400.

  2. Halve eggplants. Bake 15-20 min. Scoop out flesh and mash with fork.

  3. Mix eggplant, parsley, basil, garlic, and parmesan, eggs, SP and bread crumbs to make a firm mixture. Shape into balls the size of walnuts. Roll in bread crumbs.

  4. Bake until cooked.
