Recipe Ingredients for Eggplant - Ellen's

5 cloves garlic, minced
4 scallions, cut up
2 tablespoons olive oil
1 tablespoon ginger, fresh
1 eggplant, about 378 grams
1/4 pound mushrooms
4 tablespoons soy sauce
2 tablespoons red wine
1/2 teaspoon Tabasco
3 1/2 ounces diced tomatoes

Recipe Directions for Eggplant - Ellen's

  1. Heat oil in pot.

  2. Saute the eggplant for 15 - 30 seconds.

  3. Add all other ingredients.

  4. Simmer covered for 1 hour.
