Mediteranian eggplant dish (Vegetarian). Serve as a main or a side dish. Ground meat can be added to onion and garlic mixture.

Recipe Ingredients for Eggplant Dish

4 lb eggplant
1/4 cup olive oil
3 lb onions
15 oz tomato sauce, can
1 tbsp salt
8 garlic cloves

Recipe Directions for Eggplant Dish

  1. Slice onions and garlic, cook them with olive oil and salt in a large pot on high heat.

  2. Put some water and salt in a large bowl, cut up the eggplants, soak them in the salt water.

  3. Add the whole can of tomato sauce to the onion and garlic mixture, stir a minute or two.

  4. Add a small amount of boiling water to the mixture.

  5. Add the eggplants, stir so the eggplants get covered with the tomato sauce.

  6. Bring to boil, turn the heat to low, and cover. Cook for 1-1,5 hours. Check every 20 minutes or so. It is done when eggplants become soft.
