burn the eggplant over a flame till all burnt. put them in water to cool and peel of the burnt skin. put the eggplant, garlic diced onion,and salt to taste,in a blender on mash with a hand whisker. add the olive oil and dip in with toasted corn raps.

2 eggplant
6 cloves garlic
1 large onion
1/2 teaspoon salt
4 tablespoon extra virgin olive oil
