Recipe Ingredients for eggplant dip

3 medium eggplant, peeled, deseedes, chopped
2 tomatoes
3 cloves garlic
1/4 cup parsley
2 tsp cumin
2 tsp cayenne
3 tablespoons olive oil
2 tablespoons tomatoe paste

Recipe Directions for eggplant dip

  1. boil egglant 30-45 min. drain

  2. add remaining ingredients

  3. stir constantly over medium heat 10-15 min

  4. smash mixture

  5. adjust spices to taste

  6. add salt and pepper
