Recipe Ingredients for Eggplant Dip

1 medium eggplant
1 red onion
1/2 red bell pepper
1/2 yellow bell pepper
1/4 c. cherry tomatoes
1 T. garlic
1 T. tomato paste
1/2 T. olive oil

Recipe Directions for Eggplant Dip

  1. Preheat oven to 400.

  2. Chop all vegetables and arrange in a baking pan. Sprinkle with garlic, olive oil, salt and pepper.

  3. Place in oven and roast for 40 minutes.

  4. Once cool, put contents in blender with tomato paste. Pulse several times until dip is chunky.
