Easy eggplant recipe, can be used as a side or as a main meal

Recipe Ingredients for Eggplant Delight

3 tablespoon olive oil
1 medium eggplant (cut into 1/2 inch slices)
1 medium onion
1/2 cup cheddar cheese

Recipe Directions for Eggplant Delight

  1. Heat oil in large skillet over medium-high heat. Add onion, and saute until browned. Remove the onion from pan and set aside.

  2. Place eggplant slices in hot skillet. Fry on both sides until browned and tender. Season with salt and pepper. When the eggplant is tender, top slices with onion, and then cover with cheese. Allow cheese to melt for a few meinutes before placing on paltes and serving (with marinara sauce, if desired).
