Recipe Ingredients for Eggplant cutlets

1 eggplant
1/2 cup wheat germ
1/2 cup sliced almonds
6 oz sun dried tomatoes
2 cloves garlic

Recipe Directions for Eggplant cutlets

  1. Preheat over to 400.

  2. In food processor, crush almonds until about the size of the wheat germ

  3. Mix wheat germ and almonds

  4. In food processor, chop sun dried tomatoes and garlic.

  5. Peel and slice eggplant, about 1/2" thick.

  6. Spray baking sheet. Spray one side of eggplant slices and place sprayed side down on sheet

  7. Top with about a TBSP of tomato garlic mixture

  8. Top with generous coverage of almonds and wheat germ

  9. Bake 15-20 minutes.

  10. Enjoy!
