Recipe Ingredients for Eggplant Curry (vankkaya muddakoora)

1 cup eggplants, cubed
1 small potato, washed, peeled, cubed
3 tbsp chickpeas
1 cup squash, peeled, cubed
1 tsp ginger, ground
1 tsp peppers, green, ground
1 tsp oil
1/4 tsp mustard seeds
1/4 tsp lentil
1/4 tsp tamarind, paste
1 cup tomato, cubed
1 salt to taste

Recipe Directions for Eggplant Curry (vankkaya muddakoora)

  1. Soak chickpeas for 15 minutes.

  2. cook eggplants, chickpeas, potato, chickpeas and squash till the veggies are done.

  3. keep aside.

  4. in a wok, heat oil, add mustard, when they splutter, add the ginger and green chillie paste, saute for a minute.

  5. add tomato, saute for a minute, add the tamarind paste, salt and the veggies.

  6. turn down flame, and cook till the vegetable gravy thickens.

  7. serve with steamed rice/rotis.
