Adapted from Sundays at Moosewood. Serve over cooked rice.

Recipe Ingredients for Eggplant Curry

1 large onion
1 large eggplant
1/4 pound swiss chard
1 large red bell pepper
3 cloves garlic
1 oz fresh ginger, grated
1 tbsp cumin
2 tsp coriander
1 tsp Cinnamon, Ground
1/2 tsp turmeric
1/2 tsp Fenugreek Seed
1/4 tsp cardamom
1/4 tsp cayenne
3 tsp olive oil
2 cups water
1/2 cup coconut milk
1/2 cup cilantro, chopped

Recipe Directions for Eggplant Curry

  1. Saute onion, garlic, and ginger.

  2. Add spices. Cook a little longer.

  3. Add water and coconut milk (can substitute vegetable stock for the water). Cook until the eggplant is tender.

  4. Add the chard and continue cooking until the chard is wilted.

  5. Add the bell pepper, lemon juice, and cilantro. Cook for another two or three minutes. Add salt and pepper to taste.

  6. Serve immediately, or let it set to allow flavors to blend and gently reheat.
