Very spicy curry can be made ahead of time.

Recipe Ingredients for Eggplant curry

5 oz chicken breast, cubed
1 lb eggplant, cubed
1 cup onion, sliced
1 tsp coconut oil
3 T curry powder
2 tsp ginger, minced
3 roma tomatoes, chopped
2 cups low sodium chicken broth
1 cup lite coconut milk
1 clove garlic, minced
1 jalapeno pepper, minced

Recipe Directions for Eggplant curry

  1. Heat oil in a large saucepan. On medium heat, soften onions and ginger. Once onions are soft, add garlic and eggplant.

  2. Cook vegetables until they have softened. Add tomatoes and chicken stock. Allow liquid to reach a simmer.

  3. Add chicken cubes and curry spices and jalepeno pepper. Cover and let cook for 20 minutes.

  4. Add coconut milk and cook dish until it has reached a thick consistency.

  5. Garnish with spring onions and/or fresh cilantro and serve with quinoa or basmati rice.
