1 tsp Cumin Seed
1 medium Onions
1 tbsp Almond Paste
1 clove Garlic
1 tbsp Curry Powder
1 Tomatoes, Red, Ripe
1 cup Yogurt, Plain, Low Fat, 12 Grams Protein Per 8 Ounce
1 Peppers, Jalapeno
1 tsp Salt, Table
1 cup Coriander Leaves
1 large Eggplant
2 tbsp Vegetable Oil, Oat
1 tsp Cumin Seed
1 medium Onions
1 tbsp Almond Paste

1 tbsp Curry Powder
1 Tomatoes, Red, Ripe

Recipe Directions for eggplant curry

  1. oven 450 bake whole eggplant 20-30 min cool, peel & chop.

  2. heat oil in medium saucepan-mix cumin seed & onion cook till tender

  3. and next 4 ing.cook 1min. stir in yogurt- then eggplant, jalepeno and salt cover cook 10 min. remove lid cook 5 min garnish with cilantro.
