Quick and easy. A tasty side dish. Salt, pepper, onion powder, garlic powder, or other spices may be added as desired. Could be served over rice or pasta and topped with cheese as a main dish.

Recipe Ingredients for Eggplant Creole

1 cup (1" cubes) Eggplant
1 oz Sauteed Onions
0.25 cup, strips Peppers, Sweet, Red
1 cup, diced Celery
2 tbsp Vegetable Oil
4 serving Peach Pineapple Salsa
1 tsp Sugars, Granulated

Recipe Directions for Eggplant Creole

Dice the onion, pepper, and celery. Cut the eggplant into cubes. Heat the vegetable oil in a skillet. Saute the all vegetables about 5 minutes. Add the salsa and continue to simmer until the desired tenderness is reached. You may want to add a small amount of water or more salsa as needed.
