Recipe Ingredients for Eggplant & Chickpea Curry

1 teaspoon turmeric
1 teaspoons coriander
1 teaspoons cumin
1 tablespoon extra-virgin olive oil
1 medium onion, thinly sliced
3 cloves garlic, chopped
1 medium eggplant, peeled and chopped
1 red bell pepper, seeded and chopped
1/2 cup grape tomatoes
1/2 cup canned diced tomatoes
1 cup chick peas
1 Salt and pepper
2 tablespoons curry paste

Recipe Directions for Eggplant & Chickpea Curry

Heat a deep nonstick skillet over medium-high heat with olive oil. Add onion, garlic, turmeric, coriander, cumin, sautee 1 min. Add eggplant and bell pepper. Cover and cook stirring occasionally 7 to 8 minutes until tender. Uncover and add the tomatoes, chick peas, salt, pepper, curry paste and 1/2 cup water (or stock). Simmer 6 to 7 minutes longer.
