Recipe Ingredients for Eggplant/chard stuffed buckwheat crepes

1 cup whole milk
1 1/2 t sugar
1 pinch salt
1 1/2 T butter
1/4 c buckwheat flour
6 T flour
2 egg
1 1/2 lb eggplant
1 1/2 lb swiss chard
1 c ricotta
8 oz mozzarella
1/2 onion
1 t olive oil
3 garlic cloves
2 T white wine
1 egg
8 oz tomato sauce

Recipe Directions for Eggplant/chard stuffed buckwheat crepes

  1. Mix buckwheat crepes batter the night before. Use 1/4 c batter for each crepe.

  2. Heat oven to 400. Spray both sides of eggplant with oil. Bake until browned on both sides. Chop coarsely.

  3. Heat pan and spray with oil. Add the onion and garlic and cook over medium heat for 3 minutes stirring frequently. Add the chard, sprinkle with kosher salt and cook until wilted. Add white wine, cover, and cook until pan is dry, about 10 minutes.

  4. Finely chop the chard, Mix with the ricotta, 1/3 c water, egg, and season with salt and pepper.

  5. Spray a 9x12" baking dish. Spread 1/3 c tomato sauce. Fill each crepe with the eggplant, ricotta mixture, and mozzarella. Spread the rest of the tomato sauce over the top.

  6. Heat oven to 400. Bake covered 20-30 minutes. Bake for 5 to 10 minutes without cover.
