Eggplant dip Modified from Gourmet

Recipe Ingredients for Eggplant "Caviar"

1 eggplant
1 tomato
1 green pepper
1/2 onion
3 cloves garlic
2 tsp olive oil
2 tbs tomato paste
1/3 tsp salt
1/2 tsp sugar
1/2 tsp pepper
1 tbs vinegar

Recipe Directions for Eggplant "Caviar"

  1. Bake Eggplant, tomato (30 minutes in oven)

  2. Take from oven, let cool, then skin and chop

  3. Sautee chopped onion, garlic, pepper until soft (15 minutes)

  4. Combine, puree with tomato paste, spices, etc.

  5. Let flavors combine, eat!
