Appetizer to spread on bread, eaten cold

Recipe Ingredients for Eggplant Caviar

2 tbsp vegetable oil
1 cup onion, chopped
2 cups green pepper, chopped
1/2 cup marinara sauce
1 cup carrot, shredded
2 eggplants
1 tsp salt
1/2 tsp pepper
1/2 tsp red pepper
2 cloves garlic

Recipe Directions for Eggplant Caviar

  1. Wash the eggplants and prick them lightly with a knife all over.

  2. Roast in the oven until soft and skin separates.

  3. Saute onion in oil, add pepper, carrots, and marinara sauce. Cook for 10-15 minutes.

  4. Add a couple of tbsp of water if the vegetables start sticking.

  5. Add peeled eggplant, and cook for 10 minutes.

  6. Mash all the vegetables together.

  7. Season with salt and pepper.

  8. Add garlic (and a tsp of vinegar if desired), and stir.

  9. Cook an additional 2 minutes.
