Recipe Ingredients for Eggplant casserole

1 medium eggplant
1/2 cup cracker crumbs
1/2 cup milk
1/2 medium onion
1 medium ripe tomato
1 egg
4 tbl butter
1/2 medium bell pepper
1/4 cup grated cheese

Recipe Directions for Eggplant casserole

  1. boil eggplant til tender

  2. add salt & pepper

  3. mix egg and milk-pour over eggplant

  4. saute onion & bell pepper in butter

  5. pour over eggplant

  6. chop tomato add to mixture

  7. top with cracker crumbs then cheese

  8. bake for 20 to 30 minutes at 400
