Recipe Ingredients for Eggplant Casserole

2 eggplants, large, peeled and cubed
1/3 cup lentils, brown
1 red onion, chopped finely
2 cloves garlic, crushed
1 red pepper, finely chopped
1/4 cup pine nuts, toasted
3/4 cup short-grain rice, cooked
2 cups tomatoes,chopped canned (1 15.5 oz can)
2 T cilantro, chopped
1 T parsley, chopped
2 T parmesan cheese, grated

Recipe Directions for Eggplant Casserole

  1. Simmer lentils in water for 25 minutes, or until soft; drain.

  2. Spray pan with oil, add 1 T water and cook onion and garlic until soft.

  3. Add remaining ingredients except herbs and cook for 10 minutes, or until eggplant has softened.

  4. Add herbs, season, sprinkle with cheese and bake at 400 degrees until golden.

  5. Optional: cook eggplant shells in boiling water for 4-5 minutes, fill shells with mixture, grill for 5-10 minutes.
