Recipe Ingredients for Eggplant Casserole

4 cups eggplant
2 cups tomato
1 medium onion
1/2 tsp salt
1/2 tsp basil
12 oz Morning Star Farms Meal Starter Recipe Crumbles

Recipe Directions for Eggplant Casserole

  1. Heat oven 450

  2. Spray caserole with olive oil spray

  3. saute crumbles and onion in frying pan add tomato, basil and salt and simmer for 15 minutes

  4. Wash and slice eggplant in 1/4" thick slices

  5. Layer eggplant and cover with tomato meat mixture

  6. end with meat on top

  7. Cover with tin foil and cook for 45 minutes
