Eggplant mix for burgers or meatballs. Can be baked or fried.

Recipe Ingredients for Eggplant burgers

2 tablespoons olive oil
3 cloves garlic, minced
1 eggplant, chopped
50 g
1/2 cup parsley
1/2 cup egg white substitute
1 cup breadcrumbs
1/2 tablespoon coconut oil

Recipe Directions for Eggplant burgers

Dice eggplant and saute in olive oil with garlic. Add 1/4 cup of water, cover and reduce to low heat. Simmer for 20 minutes, until eggplant is cooked through. Let cool completely. Mix eggs, cheese, and parsley together and add to cooled mixture. Stir in breadcrumbs. Mix thoroughly and form patties or meatballs.
