Recipe Ingredients for Eggplant & Bok Choy Stir-Fry

134 g onion, chopped
579 g eggplant, chopped
500 g bok choy, chopped
117 g zucchini, chopped
89 g sugar snap peas
1 1/2 tbsp sesame oil

Recipe Directions for Eggplant & Bok Choy Stir-Fry

  1. Heat oil over medium-medium-high.

  2. Stir fry veggies - all but leafy green parts of the bok choy - about 15 minutes or until desired tenderness.

  3. Add leafy greens of bok choy for another few minutes.
