Recipe Ingredients for Eggplant Bhurta

1 eggplant
2 tsp vegetable oil
1/2 tsp cumin seeds
1 medium onion, sliced
1 tsp fresh ginger, chopped
1 large tomato, diced
1 clove garlic, minced
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp cayenne pepper or to taste
1/2 tsp salt or to taste
1/8 tsp ground black pepper
1/4 cup fresh cilantro, chopped

Recipe Directions for Eggplant Bhurta

  1. Heat oven to 450. Coat eggplant with cooking spray. Puncture with a fork a few times. Roast until the flesh is soft, about 30 minutes. Cool, cut in half lengthwise and scrape out the flesh. Chop it up and set aside.

  2. Heat oil in large skillet. Add cumin seeds, let them crackle a few seconds and turn golden. Do not burn them. Add onion, ginger, garlic. Cook until tender, not brown. Stir in tomato and the remaining spices. Cook and stir a few minutes.

  3. Stir in eggplant pieces. Cook 10 minutes so some of the moisture evaporates. Taste, adjust seasoning if necessary. Garnish with cilantro.
