Delicious mildly spicy eggplant marinara sauce!

Recipe Ingredients for Eggplant & Bell Pepper Sauce

2 tbsp olive oil
1 large eggplant
1 red bell pepper
1 green bell pepper
1 large onion
4 garlic cloves
1 jalapeno pepper
2 tbsp of tomato paste
1 large tomato
1 tbsp balsamic vinegar
1 tbsp honey
10 oz mushrooms
16 oz pasta sauce
1 Salt and pepper to taste

Recipe Directions for Eggplant & Bell Pepper Sauce

  1. Add oil to sauce pan. Add mushrooms and cook for 10 mins until slightly brown. Add onions for 7 mins then add garlic and saute for 2 more mins. Cut bell peppers into 1 inch squares and add to onions and garlic. Keep at medium heat. Cut 1 large eggplant in 1 inch cubes and add to pot for 5 mins.

  2. Add tomato paste and plain pasta sauce to the veggies and turn low and cook for 35 mins. Salt and pepper to taste.
