Like typical beef goulash, but with eggplant instead of pasta

Recipe Ingredients for Eggplant and beef goulash

700 g eggplant, cubed
300 g lean ground beef
57 g cheddar cheese, grated
2 cups spinach
150 g mushrooms
1 medium onion
220 g celery
3 cups tomatoes
1 cup green pepper, chopped
150 g rapini
3 tbsp flour

Recipe Directions for Eggplant and beef goulash

  1. Brown and drain ground beef.

  2. Saute garlic and onion. Add in celery until soft.

  3. Add in tomatoes and cubed eggplant. Simmer until eggplant is soft.

  4. Stir in mushrooms, spinach and cheese.
