Recipe Ingredients for eggplant with basil

1 lb eggplant
1 tbsp salt
1 tsp garlic
1 tsp red pepper flakes
3 tbsp olive oil
2 tbsp reduced sodium soy sauce
1 1/2 tbsp sugar
1 tbsp white wine vinegar
1/2 tsp salt
1/4 cup basil
1 tbsp sesame oil

Recipe Directions for eggplant with basil

  1. Place eggplant in colander. Sprinkle with salt and drain 1 hour.

  2. Stir fry garlic and pepper in oil - 2 min. Add eggplant adn stir-fry 5-10 min.

  3. Add soy sauce, sugar, vinegar, salt, and bail and mix well. Drizzle with sesame oil and serve hot.
