Layers of eggplant, onions tossed with pesto and spinach

Recipe Ingredients for Eggplant Bake

1 medium eggplant
1 medium onion
4 cloves garlic
1 tablespoon pesto
2 cups fresh spinach
3 tablespoons balsamic vinegar
4 oz crumbled feta
1/2 cup breadcrumbs
1 tablespoon butter

Recipe Directions for Eggplant Bake

  1. Slice eggplant 1/4" thick

  2. Slice onion and saute with garlic and pesto until soft

  3. Layer in an 8x8 baking dish (will make 3 layers): eggplant, onions, balsamic, feta and spinach

  4. Melt butter in microwave and stir in breadcrumbs.

  5. Press on top on the layers

  6. Bake at 375 for 30 minutes, or until eggplant is cooked through
