Veggie pizzas with aubergine replacing the dough base

Recipe Ingredients for Eggplant/Aubergine 'Pizzas'

2 Small(120 g) Aubergine
320 cal Mozzarella Buffalo Cheese
1 serving Extra Virgin Olive Oil
2 serving Organic Traditional Tomato and Basil Sauce

Recipe Directions for Eggplant/Aubergine 'Pizzas'

Slice aubergines into rounds about 2-3cm thick and brush lightly with olive oil , place in preheated oven (200'C) for about 20mins till cooked , add a dollop of tomato sauce or paste (slightly drier version) and place back in the oven for about 5-10mins , add any other toppings/spices of choice and a chunk of mozzarella on each aubergine round , place under grill function till melted/crispy to your liking.
