Great for sandwiches, on salad. Season to taste with curry powder (adds color!), garlic, pepper, and cayenne. Or whatever you want! Adapted from vegweb.com.

Recipe Ingredients for Eggless Tofu Salad

450 grams extra-firm tofu (1 package)
2/5 cup spectrum light vegan mayonnaise
1/4 cup celery, chopped
2 tbsp onion, minced
1 1/2 tbsp mustard

Recipe Directions for Eggless Tofu Salad

  1. Freeze and re-thaw tofu ahead of time to acheive crumbly texture.

  2. Squeeze tofu dry using paper towels to collect excess water.

  3. Crumble tofu into bowl or medium-to-large tupperware. Add celery, onion, spectrum spread (you may want more than I use, depending on texture).

  4. Mix well, add mustard and seasonings to taste.

  5. Eat now or chill overnight. Can be used for sandwiches or just on top of greens!
