Thin pancakes perfect for desserts and filling with anything sweet or savoury, made without eggs.

Recipe Ingredients for Eggless CrÍpes - Double recipe

250 g all-purpose flour
240 ml lowfat milk
320 ml water
110 g butter, melted
12 g brown sugar (2 tsp unpacked)
2 pinches salt
1/6 tsp cinnamon

Recipe Directions for Eggless CrÍpes - Double recipe

  1. Melt butter in a small saucepan, remove from heat and add in milk so that it warms a little. In a bowl, thoroughly mix flour, sugar, cinnamon and salt. Whisk flour mixture into milk mixture until batter is smooth, adding water as needed - I used all of the required amount. Cover and refrigerate 2 hours.

  2. Heat a medium non-stick frying pan on medium-high heat. Use a very small amount of veg oil if ness (I don't need it in my pan) and pour in about 3 serving spoons of crepe batter. Swirl pan to allow batter to spread out thinly.

  3. Allow to cook until the edges crisp, then flip over and lightly brown the other side. Do the same for the rest of the batter.

  4. Stack cooked pancakes on a plate and keep moist/warm by covering with a tea towel.
