Recipe Ingredients for Eggless Cinnamon Carrot Muffins

1 1/2 cups whole wheat flour
1/2 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger powder
1/4 teaspoon salt
1 cup finely grated carrot
3/4 cup water
1/2 cup apple sauce
2 teaspoons vanilla extract
1/4 cup chopped walnuts

Recipe Directions for Eggless Cinnamon Carrot Muffins

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Mix the dry ingredients and spices until well blended.

  3. Add grated carrots. Stir until thoroughly blended.

  4. Add wet ingredients. Mix thoroughly.

  5. Bake in preheated oven for about 30 to 45 minutes, or until toothpick inserted comes out clean. I used 9 inch baking mould.
