Easy to make and reheats beautifully for the next few days for a quick breakfast.

Recipe Ingredients for EggBeaters Breakfast

1 1/4 cups EggBeaters
1 cup green bell pepper, diced
2 oz Monterey Jack Cheese, shredded
5 oz Bacon
1 tsp dried chives
1 tsp dried oregano
1 Fresh ground Pepper, to taste

Recipe Directions for EggBeaters Breakfast

  1. Preheat oven to 375 degrees.

  2. Cook bacon in a skillet until crispy. Drain on papertowels. Pour fat out of skillet, but don't wipe clean.

  3. Add diced bell pepper to the skillet and cook for 5 minutes, until crisp-tender.

  4. Crumble bacon in a medium bowl. Add bell pepper, EggBeaters, chives, oregano, and pepper. Stir to combine ingredients.

  5. Thoroghly coat a round 2 quart casserole with butter flavored non-stick spray. Pour egg mixture into dish. Sprinkle with cheese.

  6. Bake at 375 degrees for 20-25 minutes, until the edges are set.

  7. Turn on the broiler and continue baking until the middle is done, about 7 minutes.
