1 whole egg
1 egg white
1 zucchini, diced
1 cup mushrooms, diced
1/4 cup milk
1 tbsp feta cheese
1 tsp vegetable oil
1 cup spinach

  1. Chop up vegetables

  2. heat oil in pan

  3. sautee the vegetables until soft

  4. seperate one egg white and whisk with one whole egg - add milk

  5. add to frying pan and scramble with spinach and feta cheese
