Healthy breakfast scramble made with egg whites and vegetarian bacon.

Recipe Ingredients for Egg white veggie scramble

4 rashers vegetarian bacon
3 egg whites
1/4 cup onion
1/4 cup green pepper
2 tsp minced garlic
1 tsp peppercorn
1/8 tsp salt
1/8 tsp pepper

Recipe Directions for Egg white veggie scramble

  1. Separate and whisk egg whites until foamy. Add salt and pepper and set aside.

  2. Cook vegetarian bacon according to instructions. Break bacon strips into small bite-size pieces and set aside.

  3. Quickly saute onion, green pepper, and garlic until warm. Add bacon strips and peppercorn. Allow the flavors to mix, then set aside.

  4. Add whites to pan, and allow to set, keeping heat low.

  5. Add veggies and bacon and mix into a scramble.

  6. Once eggs are fully cooked, remove from pan and enjoy!
