1 tsp margarine
3 egg whites
1 cups spinach
1/2 cup mushrooms
1/4 cup green pepper
1/4 cup tomato

Directions:

  1. spray pan with Pam for lower calories or margarine

  2. saute spinach, mushrooms, peppers

  3. whisk egg whites

  4. pour eggs into pan

  5. add the spinach mushrooms, peppers and tomato

  6. cook until lightly browned and bubbles on top

  7. fold over to make omelette
