Veggies, cheese, and a little bacon make up a frittata built for two

Recipe Ingredients for Egg White Veggie Frittata

5 egg whites
3 large eggs
1/2 c mushrooms
1 1/2 c broccoli florets
3 medium slices bacon
1/4 medium yellow onion
1/2 c sharp cheddar cheese

Recipe Directions for Egg White Veggie Frittata

  1. Preheat oven to 350 degrees.

  2. Chop bacon into small pieces. When mostly done add chopped mushrooms and onion into pan and sautee until cooked to your taste.

  3. Wash broccoli florets.

  4. Grate cheese into egg and egg white mixture and beat until whipped well with a fork. Add a little skim milk if you like.

  5. Heat a 12" nonstick pan (ovensafe) with a small amount of EVOO in the bottom. When hot, pour in egg and cheese mixture. Spread sauteed bacon, onion, and mushrooms and broccoli evenly about the frittata.

  6. Let it cook for 1-3 minutes on medium heat then transfer to oven. Cook for about 15 minutes until done.

  7. Serve with fresh fruit and wheat toast if you like.
