This is a recipe I made up a couple of years ago. Very easy, and delicious. My husband doesn't even realize how low-calorie it is and there's no need to add salt.

Recipe Ingredients for Egg White Vegetable Omelet

2 egg whites
1 ounce cheddar cheese
1/4 cup mushrooms
1/4 cup onions
1/4 cup red bell pepper
1 cup raw spinach
1 teaspoon butter

Recipe Directions for Egg White Vegetable Omelet

  1. Saute all vegetables in a non-stick omelet pan in one tsp butter until wilted. Transfer to a bowl. Pour two slightly beaten egg whites into the same pan. Cover with a lid and cook a couple of minutes until the whites are nearly set. Spoon the vegetables over one half of the circle and sprinkle with the cheese. Put the lid on for a minute or so, until the cheese begins to melt. With a wide spatula, flip the uncovered half of the egg white over the top of the side covered with the vegetables. Sprinkle with pepper. Add a tsp of water to the pan and put the lid back on for a minute to be sure the egg whites are completely cooked. (The steam helps to keep the whites from scorching, and helps to even out the cooking.) We love these and they are so tasty you think you're getting a real treat.

  2. Also, I use the cartons of egg whites from the dairy case instead of whole eggs.
