Recipe Ingredients for Egg White Scramble

3 egg whites
1 tsp olive oil
1 tsp garlic, crushed
40 grams mushrooms, chopped
35 grams red pepper, chopped
15 grams celery, chopped
15 grams carrots, chopped
1 Morningstar Farms Veggie Breakfast Sausage Patties, chopped
30 grams tomato, chopped
2 tbsp Italian parsley, chopped
14 grams mozzarella, part skim, shredded

Recipe Directions for Egg White Scramble

  1. Separate eggs. Beat whites slightly.

  2. Heat olive oil in pan. Add mushrooms, red pepper, celery, and carrot. Saute until cooked through, about 5 minutes. Set aside.

  3. Add 'sausage' to pan and brown according to package. When done, chop or crumble.

  4. Add scrambled egg whites to pan over medium heat. As they start to set, add in sauted veggies, sausage, tomato, and parsley. Stir together. Cook until done, about 2 to 3 minutes more.

  5. Serve immediately with salt and pepper to taste.
