I know that looking at the list of ingredients for this salad makes you think "is this for real?", but its actually really good. It makes a decent serving and fills you up so that your not getting hungry an hour or so later.

Recipe Ingredients for Egg White Salad

60 g Iceburg Lettuce
60 g Roma Tomatoes
15 g Vidalia Onion
35 g Carrots
55 g Strawberries
1 tbsp Lemon Juice
1 tsp Whole Grain Dijon Prepared Mustard
1/2 tsp Honey
100 g Egg Whites

Recipe Directions for Egg White Salad

  1. Hard boil 3 eggs by placing them in a small saucepan, 3/4 filled with lukewarm water, on medium heat. To make sure they are fully cooked through, cook them for 10 mins after the water starts boiling.

  2. Place the eggs into a bowl of cold water to cool them off - then peel off the shells.

  3. Cut the eggs in half and using a teaspoon remove the yolks. then break or dice up the egg whites and place them in a medium sized bowl with the lettuce.

  4. Dice the tomatoes, onions, carrots and strawberries and add them to the egg whites and lettuce.

  5. Either using a small whisk or fork, combine the lemon juice, mustard and honey. You can also just place the three ingredients in a small jar and shake the jar to combine everything.

  6. Drizzle the dressing/honey mixture over the salad, adding a sprinkle of pepper (and salt if desired, but it really doesn't need it).

  7. Enjoy :)
