Good protein and lower fat anytime meal. Throw the extra egg yolks in the pan afterward with some hot water and after cooked, feed to the dogs. Reduced cholesterol, lower fat, good protein. The cinnamon satisfies the sweet tooth with a dash of stevia.

Recipe Ingredients for Egg white and ricotta omelette

4 egg whites
1 whole egg
50 ml skimmed milk
1/2 tsp cinnamon
50 grams low-fat ricotta

Recipe Directions for Egg white and ricotta omelette

Separate 4 yolks from the whites, reserve. Mix whites with a whole fifth egg, add the bit of skim milk, thinly slice bits of ricotta. In a non-stick pan, add a few drops of olive oil, heat pan until the oil covers the bottom, pour egg mix into hot pan, wait 20 seconds for bottom to start to set, then add thinly-sliced cheese, shake out the cinnamon and lift the eggs from various spots so that the liquid mix and get to the bottom of the pan to cook, also making a fluffier, lighter omelette. I flip the pan onto a plate resting on top. Let gravity do the work. With a lower amount of fat to cook the egg, it is tougher to do the classic "fold" of the completed omelette.
