Recipe Ingredients for Egg White and Potato Crust Quiche

1 egg
3 egg whites
1 bell pepper, chopped
4 mushrooms, chopped
1 onion, chopped
1 tbsp ricotta cheese
2 tbsp Parmesan cheese, grated
2 medium potatoes, boiled and mashed
2 tbsp cayenne pepper
4 tbsp garlic powder
1 tbsp salt
1 tbsp olive oil

Recipe Directions for Egg White and Potato Crust Quiche

  1. Begin by boiling the potatoes until soft enough to mash.

  2. Preheat your oven to 350 degrees.

  3. Prepare a 9in pie pan by brushing with olive oil or butter.

  4. When potatoes are ready, mash and add spices (1 tbsp cayenne, 2 tbsp garlic powder, salt to taste).

  5. With a tablespoon, spread the potatoes evenly on the bottom and up the sides of your pie pan.

  6. Bake the crust in the oven for approximately 15-20 minutes or until it begins to brown.

  7. In the meantime, prepare your filling. First, saute your vegetables over med/high heat in a small amount of olive oil until they begin to soften.

  8. Break one egg into a large bowl, and add the whites of three more eggs. Whisk until fluffy. Add your remaining spices to this mixture (1 tbsp cayenne, 2 tbsp garlic) and the 1 tbsp of ricotta cheese or sour cream. Mix until well combined.

  9. When your crust is ready, remove from the oven and sprinkle with 2 tbsp of your Parmesan cheese.

  10. Pour in your filling and top with the remaining 2 tbsp of Parmesan cheese.

  11. Bake at 350 for 20-25 minutes or until center is set.
