Recipe Ingredients for Egg white omelet with spinach and feta

3 egg whites
1 egg
1/8 cup chopped red onion
2 cups spinach leaves
1/8 cup mushrooms (chopped)
1/2 tomato (chopped)
2 tbsp red bell pepper (chopped)
1 1/2 tbsp feta
2 tsp olive oil

Recipe Directions for Egg white omelet with spinach and feta

  1. Chop all vegetables and saute in pan with olive oil

  2. separate egg whites and add to bowl with one whole egg. beat together.

  3. when vegetables have browned, and spinach is wilted, add eggs. Pull eggs in from the side of the pan until firm.

  4. Sprinkle feta on top to melt, fold omelet together and serve.
