Egg White Omelet w/ Spinach and Feta Cheese

Recipe Ingredients for Egg White Omelet w/ Spinach and Feta Cheese

4 egg whites
1/2 cup spinach
1/4 cup feta cheese

Recipe Directions for Egg White Omelet w/ Spinach and Feta Cheese

  1. Lightly spray omelet pan with butter flavored cooking spray.

  2. Place pan over medium heat.

  3. Once pan is heated pour in egg whites.

  4. With a rubber spatula fold egg whites as they begin to cook allowing the eggs to solidify. However, don't stir too much otherwise you'll end up with scrambled eggs. Keep eggs in a 'pancake' like form and jiggle the pan to avoid sticking. If your omelet sticks try lightly spraying a metal spatula with cooking spray and lubricate the bottom of the omelet.

  5. Once you have a basic omelet shell (you should see no remaining liquid) add the spinach (if not cooked, throw in a seprate pan for a minute or two to cook) and feta cheese to one half side only.

  6. Once the fillings are added take the plain half of the omelet and fold it over the side with the spinach and feta cheese.

  7. Allow to cook for 30-60 more seconds then plate and serve warm.
