Use pasteurized unsalted egg whites and unsalted Dijon mustard for a low-sodium and no-cholesterol mayo

Recipe Ingredients for Egg White Mayonnaise

1/4 c egg whites
2 tsp white wine vinegar
1 tsp lemon juice
2 tsp Dijon mustard
1 freshly ground black pepper to taste
3/4 c vegetable oil

Recipe Directions for Egg White Mayonnaise

  1. Add the egg whites, vinegar, lemon juice, mustard, and pepper to a blender and pulse a few times to combine.

  2. Then turn the blender to high speed and add the oil in a thin stream through the hole in the top of the cover.

  3. Close the cover completely and allow the blender to continue running until the mayonnaise firms up, about 2 minutes.

  4. YOu may want to stop the blending after a minute or so and use a rubber scraper to push mayonnaise down from the sides of the canister.
