A delicious, light way to enjoy a frittata without all the fat and cholesterol. This meal can be prepared in less than 20 minutes. It's good for breakfast, lunch or dinner!

Recipe Ingredients for Egg White Frittata

1 1/8 cups egg whites or Egg Beater egg whites
1/4 onion, chopped
1 clove garlic, minced
1/8 tsp ground black pepper
1 1/2 cups Del Monte mixed vegetables

Recipe Directions for Egg White Frittata

  1. Spray oven-safe skillet with non-stick spray, such as Pam. Sautee onions and garlic until soft.

  2. Add mixed vegetables and pepper and toss for one minute to heat through.

  3. Pour egg whites over vegetable mixture.

  4. As the mixture begins to set, run spatula around edge, lifting to allow uncooked egg to run underneath.

  5. When top is amlost set, place under broiler for two minutes to set top. Remove from broiler, invert, slice into six pieces (two per person) and enjoy!

  6. Can be served warm for lunch fo dinner, or cold for breakfast if made the night before.
