Egg White Frittata with potato, leek, and yellow squash

Recipe Ingredients for Egg White Frittata

6 egg whites
2 eggs
3 tbsp whole milk
2 tbsp canola oil
1 potato
1 leek
1 yellow squash
2 tomato
3 slices provolone cheese
1 tbsp sour cream
1 tbsp cilantro

Recipe Directions for Egg White Frittata

  1. Boil potato.

  2. Saute chopped leek, yellow squash, and garlilc in canola oil.

  3. Add chopped potato.

  4. In a medium bowl, whisk 2 eggs, 6 egg white, and milk, and crushed red pepper flakes.

  5. Pour mixture over leeks and potatoes and cover with tomato and cheese slices.

  6. Divide into 5 pieces when top is set and serve with cilantro sour cream/
