Green pepper rings filled with eggs!

Recipe Ingredients for Egg in the veggie whole

2 tsp butter
8 tomato slices, cored
2 green peppers
2 tsp dried basil, crushed
8 eggs, beaten
1 Salt and pepper, to taste

Recipe Directions for Egg in the veggie whole

  1. Directions

  2. In large nonstick skillet, melt butter over medium heat. Fit one tomato slice inside of each green pepper ring. Place in warm pan.

  3. Stir basil into beaten eggs. Pour egg mixture into tomato/pepper rings, dividing evenly. Season with salt and pepper. Cover skillet and cook for 3 minutes or until done as desired.
